I made gingersnaps last week, since  I thought I would test out a new recipe and get a head start on the holiday baking at the same time.  I found the recipe at the Joy of Baking

Dark Brown Sugar, Molasses, Salt, Flour, Granulated (White) Sugar, Cinnamon, Ground Ginger, Ground Cloves, Butter, Vanilla Extract, 1 Egg, and Baking Soda

Thoughts On The Recipe: My only “problem” with this recipe was the fact that the dough was really sticky, even after chilling it in the fridge for around 30 minutes.  I ended up sticking it in the freezer for another 30 minutes, and while each batch was baking, I put it back in the freezer. 

Next time, I think I would make it a couple days earlier then when I really need it, just to make sure it has enough time to chill.

Other than that, they were fairly easy to make.  Another plus is that it makes a lot of cookies, so some can be frozen and the rest can go into the cookie jar! 


They were really yummy, and when I tested the cookies, the edges were chewy and crispy, with a soft center.  I don’t know if they become more crispy upon cooling off completely, but I’ll find out when I pull them out of the freezer.

    I don’t know if i’ve ever made gingersnaps.. I don’t know why because I love them. These look great!
