I don’t make risotto very much. Maybe once or twice a year, but it’s always such a treat for me to make it, and there’s so much you can do with it! I found the recipe in Cook 1.0 by Heidi Swanson.
I decided to go with vegetable stock instead of white wine- it was pretty much because I had vegetable stock and no wine. And I left out the onions.
It was pretty good, and I was ready for a nap afterwards. It did require some stirring, to make sure that it didn’t stick to the bottom of the pot. It had the right combination of cheese and butter and creaminess. There is something very comforting about a bowl of risotto or pasta on a cold, windy day.
I honestly don’t know why I don’t make risotto more, so I’ll definitely have to see what else is out there. It’s too bad I don’t have enough arborio rice…another time.
